Poor Man’s Spaghetti

Mmmm, this is a super simple recipe with so much flavor.
Ingredients needed:
Pasta
Tomato Sauce
Bell Pepper
Onion
Cheese
In a skillet, add olive oil. Sweat chopped onion and bell pepper.
Break up Thin Spaghetti, Angel Hair or vermcelli and add to the skillet.
The noodles will start looking white (like when rice is fried.)
Add 1/2 cup of tomato sauce and water. Add enough water for expansion of noodles plus a little extra. Add a bit of salt (not too much) and garlic.
Sautee till noodles are al dente.
At this point mixture should be a little soupy.
Remove from heat, add a layer of cheddar or Monterey, cover and let sit.
In 10 minutes get ready for your taste buds to dance…
In the picture below, I was craving this so bad. I didn’t have thin spaghetti, so I used regular. I didn’t have bell pepper or onion, so I used onion flakes. I should have scooped it up right out of the pan it would of looked prettier, but I stirred it.
Even without the extras it was yummy…. That is the neat thing about this dish, it is very forgiving. My oldest daughter loved it and she is a picky eater.

Oh wow! I remember my grandma used to make me sopa when I was little. I loved it so much. I never got her recipe. I’m going to try yours sounds so easy. My mouth is watering. It looks great! You took some really good pics of it.

You are taking me back to my childhood with this recipie. I miss Sopa and Albondigas. My step-grandma would always make her Sopa with angel hair pasta.
