Chicken Parmesan

This is my Honey’s favorite dish whenever we get a chance to go out and now I see why.

Ingredients:

1 Sleeve Crackers

3 Chicken Breasts

Half Box Spaghetti

Jar of your favorite Spaghetti Sauce

2 Eggs

1 Cup Flour

Mozzerella Cheese

Parmesan

Salt & Pepper

Instructions:

Preheat Oven to 350º

Crush Crackers in zip lock using roller or some other fancy tool like a can of veges.

Pound chicken between wax paper, cling wrap, or parchment paper (not too thin)

Next, get your work station ready (don’t want to have to touch too much with chicken fingers.  On a plate add your cracker crumbs, on another plate add your flour and in a bowl mix a couple of eggs.  Add salt and pepper to each.

In this order, dip your chicken into the Flour, Egg Bath and Cracker Crumbs.  Heat on a hot, lightly oiled skillet just until browned and brown the other side:

Place on a baking dish top with Mozzarella and sprinkle with Parmesan.

Bake at 350º for 10 to 20 minutes.  We baked ours for 10 and it was perfect:

It was so satisfying to hear “oooouuuu and mmmmm” from the family.

This recipe fed a family of six with some to spare.  Although I was thinking I should have made more spaghetti for left overs.
